And now for something different. Wines in this range demonstrate Simon's innovative treatment of specific parcels of fruit and his willingness to challenge the 'everyday' winemaking process. Simon loves to experiment while capturing the raw, ethereal and sometimes undiscovered qualities of individual grape varieties.
"The vines at Astrolabe Farm are some of our oldest. The riesling is grown closest to our house beside a grove of fruit
trees including, citrus, stonefruit, cider apples and a fig. Free-run juice from hand-picked and machine-harvested
grapes was fermented with light solids to produce an
aromatic, dry wine with attractive citrus and floral flavours."

- Colour/Appearance Pale lemon.
- Aroma/Bouquet Lemon-honey and lemon zest, green apple and light floral notes.
- Palate Light-textured, mineral wine, with fresh apple, lemon citrus flavours and a crisp, racy acidity.
- Cellaring Drinking well now, with the prospect of gathering palate weight and bouquet interest with bottle-age over the next five years. A good wine for long-term cellaring.
- Suggested Foods An excellent wine as an aperitif before a meal but also to partner a wide range of food, from crayfish and scallops through to pork and spicy food.
- Serve Chilled.
