And now for something different. Wines in the Vineyards range demonstrate Simon's innovative treatment of specific parcels of fruit and his willingness to challenge the 'everyday' winemaking process. Simon loves to experiment while capturing the raw, ethereal and sometimes undiscovered qualities of individual grape varieties.
- Colour/Appearance Pale white gold hue, with a hint of green.
- Aroma/Bouquet Apples and honeysuckle, with lemon-honey and a little vanilla from the oak.
- Palate Medium bodied with a focuses minerally length and flavours of crisp apple, lemon and peach.
- Cellaring Made to age gracefully; weight and honeyed flavours will result from cellaring.
- Suggested Foods Spring vegetables, grilled gamefish, goat's cheese souffle, pork terrine, and apple or pear salads.
- Serve Chilled.
